It’s Friday night and you don’t have a babysitter, so if you’re staying in for the evening as a family, it’s time to relax. While I try to prepare most of my meals completely from scratch, there are some days where I need to get food on the table quickly for my whole family without having to stress about it. What’s a great idea for a Friday night in? A new movie, pizza, and snuggles on the couch. Oh, and a delicious salad to go with your pizza — like this Tortellini Antipasto Salad! It’s simple to make and packed with big flavors. Best of all? It takes less than 15 minutes to prepare.
Ingredients:
- 9-ounce package of fresh cheese tortellini
- 1 cubed salami
- 1 cubed cheddar cheese
- 1 cup diced red pepper
- 1 cup diced cucumber
- 1/4 caesar salad dressing
Directions:
Begin by cooking your cheese tortellini according to the directions on the package. I went with a tortellini made with spinach pasta for a pop of color and flavor. While your pasta is cooking, chop the cucumber, red pepper, salami, and cheddar cheese. If those aren’t your family’s favorite vegetables, feel free to substitute others, like cherry tomatoes, artichoke hearts, or olives.
After you have drained your tortellini, set them in the freezer for just a few minutes to cool. When they have chilled, add the salami, cheese, red peppers, and cucumbers to the tortellini.
I tend to make my own vinaigrettes for salads, but caesar dressing can be a challenge to make from scratch. Instead, purchase a bottle of your favorite caesar salad dressing and toss 1/4 of a cup with your tortellini antipasto salad.

Whenever I make salad to go with our pizza, I always default to a classic salad. I LOVE your idea of a tortellini salad so much better. The protein in the pasta, along with the meats, means fuller bellies for my kids. Am going to try this next week once I pick up some tortellini! 🙂 #client
