As a kid, the only sweet potato recipes I knew about were baked sweet potatoes and the Thanksgiving casserole with marshmallows. I was never really a fan of either, so I just assumed I did not like sweet potatoes. Enter the roasted sweet potato wedges… and baked sweet potato ‘fries’… and sweet potato hash… and loads of other delicious sweet potato recipes, that are not only easy to make, but are healthy, too! One cup of cubed sweet potatoes contains just 114 calories, but packs 377 % of your daily intake of Vitamin A, 52 % of your daily intake of Vitamin C, and 50% of your daily intake of manganese.
I was given this Sweet Potato Harvest recipe as my healthy eating inspiration. It’s available along with other recipes and articles in the Healthy Living Made Simple app, available for your iPad or iPhone. This is a great vegetarian recipe that highlights the sweet potato in a new way. It would make a great side dish. I took the recipe a step further with this hearty, seasonal breakfast: Sweet Potato and Ham Hash. This recipe is packed with flavor and protein. During the holidays, we tend to eat such heavy, not-so-healthy meals, so have fun with a delicious breakfast or brunch recipe.
Ingredients:
- 3 cups sweet potato, peeled and diced
- 2 cup ham steak, diced
- 1 cup red onion, diced
- 1/2 teaspoon fresh thyme
- 1/4 teaspoon smoked paprika
- grapeseed oil
- salt and pepper to taste
- 2 eggs
Directions:
1. Begin by dicing your sweet potatoes, ham, and red onion so they are all approximately the same size. Place the sweet potatoes in a pot of boiling water for about 8 – 10 minutes, or until they are fork tender (but not mushy). Drain when they are ready.
2. Add enough grapeseed oil to coat the bottom of a saute pan. Add the red onions and cook for about 2 – 3 minutes. Add the boiled sweet potato and diced ham. Cook over a medium heat, without stirring often. When you begin to see a nice caramelized appearance on the ingredients, add the fresh thyme and smoked paprika. Season with salt and pepper and set aside.
3. Prepare one egg per serving to your liking. You can make a poached egg, fried egg, or even scrambled egg. Serve the hash on the bottom with the egg over the top.
