Sunday Brunch Toast Recipe

This Sunday Brunch Toast recipe combines freshly-baked bread, egg, bacon, and avocado.

My family has a weekend tradition. Saturday morning, we head to our local farmer’s market. During the Fall, Winter, and Spring months, we pick up a community supported agricultural share from a local farm, filled with delicious seasonal produce. There are vendors that sell freshly-prepared baked goods like breads and muffins, vendors that sell flowers, vendors that sell delicious foods from around the world, and a vendor that sells sausage and bacon. We often grab a cup of coffee, listen to live music, and enjoy strolling through the farmer’s market, purchasing tasty local food. Sunday morning, I prepare a delicious brunch for the family with our fresh goodies. My favorite thing to make? I call it Sunday Brunch Toast, and every week it’s a little different based on seasonal ingredients. Here’s one delicious Sunday Brunch Toast recipe with bacon, avocado, cheese, and of course, a Happy Eggs’ egg. Happy Eggs’ fresh eggs come from 31 small family farms in Missouri and Arkansas. Each has over 8 acres of outdoor access for hens to forage freely. For people like me who are concerned about the quality of their food, rest-assured Happy Eggs’ farm-fresh eggs are of the highest quality because of the care the hens receive.

Sunday Brunch Toast ingredients:

  • 2 Happy Eggs’ eggs
  • 2 slices of freshly-baked bread
  • 4 strips of bacon
  • 1 avocado
  • 1 ounce of cheese of your choice {I selected an aged gouda}
  • salt + pepper, to taste

Begin by organizing your ingredients. As I stated above, I love to select high-quality, farm-fresh ingredients for my Sunday Brunch Toast. This is a recipe where each ingredient really shines, so make sure you choose ingredients the right combination of seasonal ingredients that contribute a delicious flavor to your final dish. Some alternative ingredients may be a soft cheese, like goat cheese or even brie, smoked salmon rather than bacon, either fresh or roasted tomatoes, or even a green like arugula. To begin preparing the toast, cook your bacon according to the directions on the package {I love Black Forest bacon for this recipe}. Save the bacon fat for later.

I highly-recommend using bread fresh from the bakery. I like to slice my toast thicker for this recipe, so I purchase my bread unsliced. While the bread is toasting, mash your avocado. To pick a perfectly-ripe avocado, squeeze it gently. You should be able to push into it a little, without it being too soft.

Spread half your mashed avocado on each piece of toasted bread. Then add two slices of your cooked bacon on the avocado. Doesn’t this look absolutely delicious already?

Now here’s the important part… the fried egg! Remember that reserved bacon fat you had? It makes the most delicious sunny-side up egg, with a little crispiness right along the edges of the white.  Turn your stovetop to a medium-high heat, crack your egg in the middle of the pan, and fry until the whites are completely set and the yolk is still runny inside. When you buy Happy Eggs, you can be certain they are from hens raised in natural conditions, where they can perch, explore, bathe in the sun, and stretch their wings. You can taste the difference in their eggs!

To complete this dish, lay the fried egg over the bacon, avocado, and toast. Finely-grate your favorite cheese over the top. I use a Microplane grater to get a very fine dusting of cheese. Be sure to season with salt and pepper as well. Your Sunday Brunch Toast is ready to serve!

The late Anthony Bourdain once said “An egg in anything makes it better” and I think I agree. And when you ‘crack open’ that runny yolk? It’s just… amazing. Make sure you dip your toast in it as you eat so that you can absorb every bit of delicious perfection!
