I decided to try something completely new for my latest recipe. Rather than relying on my go-to ingredients, I purchased Zespri SunGold Kiwifruit. It’s fun to wander outside your comfort zone when it comes to ingredients and recipes to try something completely new. This recipe was definitely a hit in my family that we will make again! Strawberry Kiwi Cheese Tart Ingredients:
- 1 store-bought pie crust, uncooked
- 1 package Zespri SunGold Kiwifruit
- 1 package strawberries
- 8 ounces cream cheese
- 1 cup powdered sugar
- zest of one lemon
Strawberry Kiwi Cheese Tart Directions:
Preheat your oven to 400° F. This is such a great recipe with just 6 ingredients you can find on your next Walmart shopping trip. Pre-made pie crust is such a time saver, and the combination of strawberries and kiwifruit with the creamy cheese filling is just amazing. I sampled the Zespri SunGold Kiwifruit and learned that this naturally yellow fruit is sweeter than green kiwifruit. The flavor was similar to that of a mango. It is packed with nutrients, including folate, potassium, and vitamin C.
Purchasing store-bought, pre-made pie crust definitely simplifies this recipe. Pie crust is one of those things that takes a while to make and requires a lot of knowledge of how pastry works. I selected a package with two pre-made crusts near the dairy section of the grocery store. Lydia and I worked together to place the rolled-out dough into the tart pan and pinch it into the scalloped edge. I blind-baked the dough, which means I lined it with parchment paper and filled it with weights {you can just use dried beans or rice} and baked the dough for about 20 minutes until it was golden and crisp. Remove the crust from the oven and allow it to cool completely.
While the crust is baking, prepare the fruit. The strawberries can be prepped by cutting off the tops and thinly slicing them. I tried to pick out the reddest, ripest strawberries to make this tart. For the kiwi, cut them in half, scoop around the edges with a spoon, and thinly slice them.
Next, prepare the cheese filling. In a mixer fitted with a whisk, combine one package of cream cheese, one cup of powdered sugar, and the zest of one lemon. I whipped the cream cheese mixture for several minutes to really make it light and airy. This gives a great texture to your tart. Once the crust has cooled completely, fill it with the cream cheese mixture. Look at those little flecks of lemon zest! They give this tart the perfect little bite.
Work your way around the tart placing the sliced fruit in layers until you reach the center. Kids are great at helping with this part. I love the way the color of the strawberries and kiwifruit complement one another. This just looks like summer on a plate.
To serve your Strawberry Kiwi Cheese Tart, just slice it and enjoy! Warning: this one may go quickly, so be ready to enjoy it all! Just store it in the refrigerator, and it is delicious the next day, too, so it’s a great prep-ahead dish for your next summer celebration.
