Simple Southwest Salad

Before my son was born in 2011, I was a vegetarian for about five years. While pregnant, I began incorporating meat back into my diet. I was exceptionally thoughtful at first about only using small quantities of meat, with an emphasis still on lots of vegetables, fruits, legumes, and grains. Over time, however, I have gotten back to preparing primarily meat-based main courses. One of my New Year’s resolutions is to eat meat more thoughtfully and prepare dishes that focus on vegetables, fruits, legumes, and whole grains. Creating balanced meals always seems so time-consuming, but this Simple Southwest Salad is a super-fast recipe you can pull together in about 10 minutes.

Southwest Salad

Ingredients

Salad:

  • 1 bag Birds Eye® Protein Blends – Southwest Style
  • 1 large tomato
  • 1 large avocado
  • 1 cup shredded pepper jack cheese
  • 1 head romaine lettuce

Dressing:

  • 1/4 cup sour cream
  • 1/4 cup mayonnaise
  • 1 t taco seasoning
  • juice of one lime

Directions:

Head to Walmart and purchase one package of Birds Eye® Protein Blends in Southwest Style. I grabbed a bag of Italian Style to try as well (also available in Asian Style and California Style). This Southwest Style Blends contains whole grains, black beans, corn, lentils, and red bell peppers in a zesty sauce. It makes a great side dish on its own or addition to some of your favorite recipes. It takes just moments to prepare in the Steamfresh bag.

Birds Eye Protein BlendsNext, prepare all of your ingredients. I diced tomatoes and hass avocado and shredded pepper jack cheese, but you can also add jalapeños, pinto beans, cucumbers, or any of your favorite vegetables and beans. You can even try adding tropical fruits like mango or pineapple for a sweet touch to this savory dish.

Salad Ingredients

To serve this Simple Southwest Salad, you can set out separate dishes of your salad ingredients so your family members or friends can build their own salads, or you can assemble one salad to serve family-style. This family-style salad serves 4.

To dress this salad, combine the sour cream, mayonnaise, taco seasoning, and lime juice in a condiment bottle and shake until well-blended. Drizzle the Southwest dressing over the top and toss through. Serve as a side dish with your favorite dinner, like chicken fajitas or grilled fish.
