Shrimp Scampi with Beet Noodles is a better-for-you way to eat one of your favorite foods.

2017 was a hectic year for us as a family. Not only did we sell our house in South Florida and relocate to North Florida mid-year, we also completed a huge home renovation project. This also meant new full-time job for me, new school for the kids, new friendships, new routines, new weather conditions to get acclimated to, etc. The list could go on. With all of that happening, a few things fell to the side. This includes maintaining a wholesome diet. The first goal I would like to tackle in 2018 is better eating. A great way to get started is by modifying some of my favorite, more indulgent recipes to create better-for-you versions, like this Shrimp Scampi with Beet Noodles. I love pasta, but I also really enjoy beets, so I’m going to replace traditional noodles with beet noodles. To make beet noodles, I’m replacing the olive oil I normally use with Mazola® Corn Oil. Rather than using butter to saute your shrimp, you can use Mazola® Corn Oil as well. A clinical study showed Mazola® Corn Oil reduces cholesterol 2x more than extra virgin olive oil. Shrimp Scampi with Beet Noodles Ingredients:

  • 1 pound jumbo shrimp
  • 2 beets
  • 2 garlic cloves, crushed
  • juice of one lemon
  • Mazola® Corn Oil
  • 1 T panko bread crumbs
  • salt & pepper to taste

 

Shrimp Scampi with Beet Noodles Directions:

Preheat your oven to 450°F. Beets can be messy to prepare, so you may want to consider wearing gloves when cleaning them. For this recipe, you will cut off both ends of the beets {the greens and the root} and peel them. To make the noodles, you will use a spiralizer. This is an inexpensive kitchen tool that can be used to prepare a variety of vegetable “noodles”, like zucchini and sweet potatoes. Simply place the cleaned inside the spiralizer and turn the handle to make these beet noodles. I recommend preparing one beet per person.


Place the spiralized beets on a cookie sheet. Add salt and pepper to taste {and any other spices you may enjoy} and toss them with a drizzle of corn oil. This helps to roast them at a high heat within your oven. Corn oil has a smoke point higher than most cooking oils at 450°F and performs well in a variety of cooking applications. Bake for exactly 6 minutes, then remove from the oven. Your beet noodles are ready!


To prepare your shrimp, add a teaspoon of corn oil to a saute pan. Add five to six jumbo shrimp shrimp per person {a dozen total for a date-night-in for two. This is a great romantic dinner}. I like to peel and devein my shrimp, but leave the tails on for a restaurant-style preparation. Add two cloves of crushed garlic, the juice of one lemon, and salt and pepper to taste. Saute the shrimp for 2 minutes on each side as shrimp cook very quickly. Midway through, sprinkle with panko bread crumbs for a little crunch. When they are pink and cooked-through, remove from the heat, add them atop your beet noodles, and sprinkle with freshly-chopped parsley. Your delicious Shrimp Scampi with Beet Noodles is ready to serve in just minutes. Less time in the kitchen means more time together with your family or a special date!

Head to your local grocery store to purchase all of the ingredients to prepare better-for-you recipes this year. Think about how you can replace some of those more indulgent ingredients in your favorite recipes with lighter ingredients to meet your new goals.
