Learn more about Gluten-free, Calorie-free Miracle Noodles
About a year ago, my dad was diagnosed with a medical condition that forced him to significantly change his diet. He had to eliminate a lot of foods, including high-calorie carbs and animal products. In cleaning up his diet, he discovered Miracle Noodles. I was intrigued by these products he spoke of so highly that I decided to try them for myself. Here’s what I was sent:
Gluten-free, Calorie-free Miracle Noodles: Kanten Pasta, Miso Soup, Miracle Rice, Spinach Noodles, Angel Hair, and Ziti
I did my research and learned the following about Miracle Noodles:
- Contain Zero Net Carbohydrates, Zero Calories, No Gluten, No Soy
- Made from a natural dietary fiber called glucomannan with no fat, sugar, or starch
- Medical studies show beneficial effects for Type II Diabetes, Constipation, Obesity, and Cholesterol
- Known in Japan for over 2000 years as a healthy addition to your diet
- Made without genetically-modified ingredients
- Vegetarian/vegan-friendly
It’s rare to find a product that is appropriate for both low-carb and low-fat diets, but with zero calories, zero net carbs, no sugar, soy, or fat, Miracle Noodles are great for a variety of diets. Miracle Noodles taste similar to a rice noodle that you would find in Asian cooking, but can be prepared as you would an Italian pasta dish as well. They cook up in 2 – 4 minutes and have a good texture.
The first thing I made was the Miso Soup. I happened to be cooking a pot of chicken broth that day, so I actually used the broth to make the soup. The package contains dried vegetables, like scallions and eggplant, and when I added the hot broth, they tasted fresh. My daughter and I both really enjoyed this soup.
My Miracle Noodle kit came with a recipe for Cold Sesame Noodles made with the Angel Hair Noodles. This is a dish my dad used to make for me as a child, so I was excited to try their recipe. It was delicious! I made a few variations based on the ingredients I had in my home, but here is the actual recipe below.
- 3 bags of Miracle Noodle Angel Hair Noodles
- 1/4 cup of tahini
- 3 T lemon juice
- 3 T water (warm)
- 1 T soy or tamari sauce
- 2 – 3 carrots (julienned)
- 1 scallion thinly sliced
- 1 ounce shredded jicama
- 1 ounce red pepper (julienned)
- 3 fresh mint leaves
- Sriracha to taste
Directions:
Prepare noodles according to directions and place in refrigerator to cool. Cut jicama, carrots, red pepper, mint, and scallions (Note: Keep scallions and mint separate from other vegetables and add them at the very end). In a bowl, combine tahini, lemon juice, warm water, soy sauce, and sriracha and mix together. Add noodles and vegetables to the sauce and mix well (but gently as to not break the noodles). Then add the scallions and mint. If desired, add your favorite protein of chicken, fish, or shrimp. Serves 4.
The Cold Sesame Noodles were a great side dish, served with Asian-marinated pork chops, honey-soy carrots, and pickled cucumbers.
