Chocolate-Hazelnut Raspberry Crepes are my family’s favorite dessert that can be prepared with everyday ingredients.

I always loved cooking, but I really did not get the opportunity to experiment in the kitchen until I left for college. My mom always prepared midweek meals at home, and we usually dined out on the weekends. Once I lived in a dorm with a kitchen, I was able to take my 10+ years of culinary knowledge I acquired watching cooking shows to really test out what I can create. I was getting pretty good at appetizers/entrees, but it wasn’t until I began tutoring a boy in middle school that his grandmother taught me to make one of my family’s all-time favorite dessert: crepes. These chocolate-hazelnut raspberry crepes are simple to make and fun for the whole family to assemble!

Chocolate Hazelnut Raspberry Crepes Ingredients:

  • 1 1/2 cups whole milk
  • 1 cup flour
  • 2 eggs
  • 2 T sugar
  • 1 T butter, melted
  • 1/2 t vanilla extract
  • 1 small jar chocolate-hazelnut spread
  • 1 pint raspberries
  • 1 can whipped cream
  • crushed hazelnuts {optional}

Chocolate Hazelnut Raspberry Crepes Directions:

Begin by preparing your batter, which is as simple as whisking together the whole milk, flour, eggs, sugar, melted butter, and vanilla. Combine it well to remove any lumps. Because crepes are so thin, you want to batter to be very smooth. This is a really fun recipe to make with kids because it is easy to prepare, but in the process, they will learn a few simple cooking techniques.

To prepare the crepes, use a small nonstick pan over a medium heat. Pour about 1/2 cup of batter into the pan {I use a ladle to do this}. Use the handle of the pan to swirl the batter around until the bottom surface of the pan is coated. Cook for about 2 to 3 minutes until the edges begin to pull away and you can easily flip it with a rubber spatula. It was fun to show Lydia how this was done! I know my crepes are ready with then have light golden spots. This recipe makes a dozen crepes, so you have lots of opportunities to perfect the technique!

For a fun brunch item or dessert, set up a crepe spread. I included chocolate-hazelnut spread, fresh raspberries, chopped hazelnuts, and whipped cream. You can also try vanilla pudding, strawberries, chocolate syrup, blueberries, bananas, almonds, and really anything you like! This way, everyone in your family can enjoy adding their favorite ingredients to build delicious crepes.

Lydia had fun building her crepe treat. She doesn’t like nuts, so she added fresh raspberries and whipped cream. She truly loves helping me out in the kitchen, and I really enjoy the time we get to spend together. Her desire to prepare her own kitchen concoctions really reminds me of myself! Maybe she’ll be a food blogger one day, too.
