One-Pot Twist on Traditional Lasagna

This recipe is amazing for so many reasons! First off, who has the time to prepare a traditional lasagna from scratch mid-week? This recipe has the authentic flavor of your grandmother’s lasagna, prepared in just 30 minutes. Do you have a child who isn’t always so excited about eating fresh vegetables? This is a great way to incorporate carrots, spinach, and any other vegetable you like into a meal kids love. And who likes to do extra dishes? Not me! This entire dish can be prepared in just one pan. So here’s my One-Pot Lasagna recipe, featuring Classico Family Favorites Traditional sauce.

Ingredients:

  • 1 pound loose Italian sausage
  • 1/2 box ready-to-bake lasagna noodles
  • 1 1/2 cups chicken broth
  • 1 1/2 cups Classico Family Favorites Traditional sauce
  • 8 ounces mozzarella cheese
  • 1 cup ricotta cheese
  • a carrot
  • a small onion
  • 2 cloves garlic
  • 2 cups fresh spinach leaves
  • fresh basil or Italian parsley
  • salt & pepper to taste

Directions:

Step 1 – In a small food processor, chop onion, garlic, and carrot. Add sausage and the chopped onion, garlic, carrot mixture to a large pan that can be placed in the oven. Saute over medium heat until the sausage is cooked through.

Step 2 – Add chicken broth and Classico sauce to the pan and bring to a simmer. Season with salt and pepper to taste.

Step 3 – This is a fun part for children! My daughter broke the lasagna noodles into smaller pieces (about 4 pieces per noodle). I let her stand on a chair and carefully place them into the pan. If you don’t feel comfortable having your child help near the stove, they can break the noodles at the table and you can add them to the pan.

Step 4 – Allow the mixture to simmer until the noodles are cooked through (about 8 to 10 minutes). If you find too much of the liquid has evaporated or absorbed, feel free to add a little extra chicken broth.

Step 5 – Add chopped spinach to the dish and stir. Turn your oven to broil.

Step 6 – Place slices of the mozzarella cheese over the surface of the dish. Add dollops of ricotta cheese. Place the entire pan in the oven. Broil for about 3 – 5 minutes, until the cheese is melted. Sprinkle with chopped fresh basil or parsley and serve.

Makes about 4 servings.

This is a great dish to refrigerate and reheat for later. You can even separate out small portions and place in the freezer to bring to school or work instead of a frozen dinner.
