I toasted a delicious piece of sourdough bread, made a Shakshuka-inspired sautéed vegetable mixture, and topped it with a fried egg to make this Shakshuka Toast Recipe. Shakshuka Toast Ingredients:
- 2 slices bread
- 2 Happy Egg Co. eggs
- 1 cup diced tomatoes
- 1 cup diced peppers
- 1 cup diced onions
- 1/2 bunch Swiss chard
- 2 cloves garlic
- 2 T olive oil
- 1/2 t cumin
- 1/4 t paprika
- 1/8 t cayenne pepper
- salt + pepper to taste
Shakshuka Toast Directions:
Begin by gathering all of your ingredients. I love purchasing locally-grown and prepared ingredients whenever possible, so I shopped my local farmer’s market for the freshly-baked sourdough bread and beautiful fruits and vegetables. For the eggs? I headed to Publix to grab a dozen Organic- Free-est of the Free Range. To prepare this toast recipe, you will need to roughly chop your ingredients. I chose to use shishito peppers, but you can use bell peppers, poblano peppers, really any peppers you like while work well! I like a nice rough dice that will help to maintain the texture of the ingredients even after they have been sautéed.
To prepare the shakshuka mixture, add two tablespoons of olive oil to a pan and add the tomatoes, peppers, onions, and garlic. Sauté over medium heat about 12 – 15 minutes. At that time, the tomatoes should break-down, peppers have softened, and onions are translucent. Add your greens and spices, as well as 1 -2 tablespoons of water, as needed to wilt the greens. I chose Swiss chard, but you can also use kale or spinach.
As the greens are softening, you can prepare the other components. Toast your bread until the edges begin to brown. In a small pan, fry one egg until the edges are crisp but the yolk is still runny. Remember to add salt and pepper to taste! And speaking of yolks, do you see the deep orange color over these Happy Egg Co. yolks? It’s amazing!
When your bread is toasted, egg is fried, and Shakshuka mixture is thoroughly cooked, it is time to assemble. Just spread the Shakshuka mixture on to your bread. It should be similar to the texture of a ratatouille or really chunky tomato sauce. Add the fried egg over the top and enjoy!
