No Bake Salted Caramel Pumpkin Pie

Hooray, it’s fall (sorta)! With the temperature still reaching 90 degrees in South Florida, it’s not really feeling that way… but according to my calendar, it’s already mid-October. Each fall, we celebrate the season with lots of fun family activities. When the kids are younger, we would bring them to pumpkin patches, plop them in front of a pumpkin on a pile of hay, and shoot some photographs. Now, the kids can engage in more activities, like pumpkin painting.

We had fun painting pumpkins at a local nursery last weekend. The kids enjoyed picking the perfect pumpkin, covering their pumpkins with paint, waiting for them to dry while we enjoyed a dinner of local barbecue (yum!), and bringing them home to set-up outside our front door. painting girl

Preparing delicious fall-inspired dishes is also part of our traditions. I make all types of soups, stews, cookies, and cupcakes. Most of those are quite time-consuming, so why not prepare a quick and easy fall dessert? As a life-long foodie, it’s interesting to watch the food trends over the years. Remember when everyone made chipotle-flavored everything? Then it was maple-bacon everything (and still is). Chocolate with spices, trendy doughnuts, red velvet cupcakes at every restaurant…and the list goes on. This seems to be the year of pumpkin and salted caramel, and honestly, who can argue with that? I put the two together in this No Bake Salted Caramel Pumpkin Pie recipe that takes just seconds to make.

No Bake Salted Caramel Pumpkin Pie

Ingredients:

  • 3 containers Dannon® Greek Yogurt Oikos® Pumpkin Pie
  • Keebler® Ready Crust® Mini Pie Crusts (6 count)
  • Reddi-wip® original 13oz can
  • 6 ginger snap cookies
  • salted caramel sauce

Directions:

Begin by gathering your ingredients. Fill each Keebler® Ready Crust® Mini Pie Crusts with half a container of Dannon® Greek Yogurt Oikos® Pumpkin Pie to make six individual pies.

Next, top your pie with Reddi-wip® original whipped cream. The more, the tastier! This recipe takes just seconds to prepare and doesn’t require heat or sharp tools, so you can let your kids make them with you.

On top of the whipped cream on each individual pie, sprinkle crushed ginger snaps and drizzle with salted caramel. I found the prepared salted caramel down the baking aisle at Walmart. I heated it slightly and placed it in a squirt bottle to drizzle it easily.

    Pumpkin painting is so much fun! We usually do this with our kids as well, it’s one of our traditions to get them each a mini pumpkin and then let them decorate it however they want (paint usually gets mixed in there somewhere!) I love the idea of whipping up some of these after the pumpkin festivities for a really special yearly tradition! ~ client
