If you guys haven’t figured it out yet, cheese is one of my weaknesses. That means that I can literally grab a brick of cheese from the fridge and easily eat half of it on crackers while sitting at my desk working. My solution to not over-indulging {hello, New Years Resolutions} is to create sensible portions I can snack on while working from home. I combined some of my favorite flavors to make this Mini Lemon Dill Cheeseball recipe. And the perfect way to serve them? Add a Sensible Portions Sea Salt Garden Veggie Straw for an edible “skewer”. Mini Lemon Dill Cheeseball Ingredients:

  • 8 ounces cream cheese
  • 2 T butter
  • 2 t finely chopped scallions
  • 2 t finely chopped dill
  • 2 t lemon zest
  • 1/4 t salt
  • 1/4 t pepper

Begin by gathering your ingredients. This is a simple recipe that can be quickly prepared with few ingredients. I like to set my cream cheese out in advance so it softens.

Melt the butter and fold it into the cream cheese. The butter helps to make a firm cheese ball.

Next, add the finely chopped scallions, fresh dill, salt, pepper, and lemon zest to the cream cheese-butter mixture. This is such a classic flavor combination. The herbaceous dill and scallion flavors pair wonderfully with the pop of acid from the lemon zest.

When the mixture is combined, place it in the refrigerator for about an hour until it is firm. At that time, form tablespoon-sized scoops and place them on a cookie sheet or cutting board. Place one Veggie Stick in the center of each one, and they are ready to serve.
