Over the summer, my daughter came to us saying she wants to eat a more plant-based diet. As a vegetarian myself for 5 years from around 2006 – 2011, I totally understand a desire to eat more fruit and vegetables, limiting meat consumption, so I was onboard. I started to re-think her school lunches, which usually include meat as the entree, and I came up with this delicious vegetarian sandwich: cream cheese, cucumber, sprouts, and avocado on a King’s Hawaiian Original Dinner Rolls. It’s the perfect balance of creamy, crunchy, savory, and sweet.
Here’s a simple recipe you can prepare for your child’s lunch in just minutes. As you can see below, I’m writing the ingredients list without measurements because that is really up to you! Make sure to guide yourself with this clean eating grocery list that is full of nutritious food for your body.
Vegetarian Sandwich for Kids Ingredients:
- King’s Hawaiian Original Dinner Rolls
- Herb cream cheese
- Avocado
- Sprouts
- English cucumber
Vegetarian Sandwich for Kids Directions:
Begin by gathering your ingredients. I have always been a vegetable lover myself, so I combined some of my favorite vegetables to make this sandwich. Herb cream cheese is the perfect complement to the vegetables, and of course, serving it on a King’s Hawaiian Dinner Roll completes this sandwich.
First, slice the roll in half. I spread a nice portion of herb cream cheese on one side of the King’s Hawaiian Dinner Roll. Plain cream cheese or even ranch dressing would work as well. I just love recipes with so many variations!
To assemble this delicious vegetarian sandwich, prepare your vegetables. I thinly sliced the cucumbers. I love the English cucumbers because they are seedless and the skin is really thin. Not having to peel vegetables is a bonus when preparing school lunches for kids. For the avocado, I made sure it was slightly soft to the touch {indicating ripeness}, then sliced it in half and removed the large seed. The sprouts are easy – just open the package and go! I selected alfalfa sprouts, but any sprouts will work in this sandwich. Layer the ingredients in your preferred order.
Put the two sides of the sandwich together, and it’s ready to serve at home or stick in a zipper bag in your child’s school lunch.
