This Strawberry Ricotta Basil Pizza can be prepared in minutes with English muffins!
My kitchen is truly the heart of my home, especially in our new house in Gainesville. We designed the kitchen to be completely open with a huge island in the middle, stools on one side of the island. Food to me is family. It’s connecting at the beginning and end of each day, and ever since she was a toddler, Lydia has loved helping in the kitchen. Now that she’s a strong, smart, creative 8-year old, she’s ready to start creating her own recipes in the kitchen using her favorite flavors. This time, she made a Strawberry Ricotta Basil Pizza with a Bay’s English muffin as the base. She was so excited to be a part of this project. Strawberry Ricotta Basil Pizza Ingredients:
- Bays English Muffins
- Ricotta cheese
- Ripe strawberries
- Fresh basil leaves
- Optional: balsamic vinegar reduction or cracked black pepper
Strawberry Ricotta Basil Pizza Directions:
To prepare this Strawberry Ricotta Basil Pizza, begin by gathering your ingredients. If you noticed, I did not include measurements above. That’s because this is the type of recipe where you determine exactly how much you want of each ingredient on your English muffin pizza. After splitting the English muffin into two halves, toast it until the edges are golden brown and it is crunchy on the outside. Slice your strawberries and chiffonade your basil to create thin ribbons {details in the video above}.
After your English muffin comes out of the toaster, spread a layer of ricotta cheese. Lydia absolutely loves cheese, and the great thing about ricotta is that it can be served in sweet or savory preparations. Top with a layer of sliced strawberries, the riper the better, and a sprinkle of basil ribbons. Your Strawberry Ricotta Basil Pizza is complete! For the adults, you can drizzle a little reduced balsamic vinegar and/or add cracked black pepper.
This recipe would be a great addition to your next brunch spread. Lydia devoured her Strawberry Ricotta Basil pizza within minutes. She loved the recipe she created. Which reminds me to tell you… Get your kids in the kitchen! I’ve found that they create healthier recipes they are happier to eat if they’re involved in the preparation. I remember making English muffin pizzas as a kid {the traditional way} and I always enjoyed eating them.
