There’s one recipe that my mom made us for lunch every so often. I’m not even sure you can call it a recipe because it only has two ingredients. My guess is that her mother or grandmother made it for her, and she carried on the tradition by making it for me and my sister. Here it is: Noodles + Cottage Cheese. That’s it. That’s the whole recipe. Probably straight from turn-of-the-last-century Eastern Europe. You have a little leftover cheese, a little leftover noodles, mix them together, and it’s lunch. My mom also served them as a side dish with a little butter and garlic, usually with chicken and broccoli. Egg noodles were definitely a staple in my house as a child. To spice things up, you can also incorporate the healthiest noodles in such recipes to ensure that your lunch is packed with nutrients.
The types of noodles my mom would use varies. It was probably whatever she had half a box of from a previous meal. It could be spinach rotini, penne rigate, or simple egg noodles. The hot noodles plus the cold cottage cheese always just tasted yummy.
