This Pork Thai Red Curry recipe can be prepared in about 30 minutes, so it’s a great midweek meal.




  1. Begin by cubing your pork into pieces that are about 3/4″. Consistency is key to getting an even cook, so try to make precise cuts. In a saute pan, place a quick drizzle of olive oil. Brown the cubed pork over a medium heat until it is cooked through, about 10 – 15 minutes.
  2. While the pork is cooking, steam your favorite combination of fresh vegetables. You will need 6 cups total. Some ideas include bell peppers, broccoli, zucchini, yellow squash, green beans, snow peas, snap peas, and carrots. Again, make sure you cut the vegetables into even pieces so they cook consistently. Steaming should take approximately 10 minutes start-to-finish.
  3. When the pork is cooked, remove it from the pan and set inside. In the pan, add the cup of coconut milk, 2 tablespoons red curry paste {you can find this in the Asian section of almost any grocery store in a small jar}, and 1 tablespoon brown sugar. Simmer this sauce for about 5 minutes until the ingredients are well incorporated and the sauce has a nice consistency.
  4. To serve, place a nice portion of steamed vegetables in a dish. Add a serving of pork, and pour the red curry sauce over the top. You can also serve this over jasmine rice or cauliflower rice, and it is just delicious!
