This Pork Thai Red Curry recipe can be prepared in about 30 minutes, so it’s a great midweek meal.
I got on the scale recently, and I was not happy with what I saw. I know a number isn’t everything, but my clothes were feeling snug, my energy was low, and I knew I wasn’t nourishing my body properly. It was time for a change. Ever since my dad passed away almost a year and a half ago, I just haven’t dedicated the time and effort needed to maintain an ideal weight, diet, and exercise routine. So I decided it was time to change! I cut out my bread, pasta, rice, cookies, cake, chips {you know, all the fun stuff}, and I got creative in the kitchen, starting with this recipe for Pork Thai Red Curry. It was so easy to make in about a half hour, and you can really customize it to your liking.
Pork Thai Red Curry Ingredients:
- 1.5 pound pork tenderloin
- 6 cups of your favorite vegetables
- 1 cup coconut milk
- 2 T red curry paste
- 1 T brown sugar
- lime wedges
- olive oil
- Optional: cauliflower rice or jasmine rice
Pork Thai Red Curry Directions:
- Begin by cubing your pork into pieces that are about 3/4″. Consistency is key to getting an even cook, so try to make precise cuts. In a saute pan, place a quick drizzle of olive oil. Brown the cubed pork over a medium heat until it is cooked through, about 10 – 15 minutes.
- While the pork is cooking, steam your favorite combination of fresh vegetables. You will need 6 cups total. Some ideas include bell peppers, broccoli, zucchini, yellow squash, green beans, snow peas, snap peas, and carrots. Again, make sure you cut the vegetables into even pieces so they cook consistently. Steaming should take approximately 10 minutes start-to-finish.
- When the pork is cooked, remove it from the pan and set inside. In the pan, add the cup of coconut milk, 2 tablespoons red curry paste {you can find this in the Asian section of almost any grocery store in a small jar}, and 1 tablespoon brown sugar. Simmer this sauce for about 5 minutes until the ingredients are well incorporated and the sauce has a nice consistency.
- To serve, place a nice portion of steamed vegetables in a dish. Add a serving of pork, and pour the red curry sauce over the top. You can also serve this over jasmine rice or cauliflower rice, and it is just delicious!
