Preheat your oven to 350 degrees. Pop open your first can of dough and unroll it. Cut each croissant in half the long way to form two smaller triangles to make mini croissants.
Spread a layer of the Kaukauna Spreadable Cheese on the croissant. I used the Sharp Cheddar variety, but you can try different Kaukauna Spreadable Cheeses to find your favorite! Cut a piece of honey ham to fit over the cheese and roll it up. Complete this process with both cans of croissant dough. Lay your mini cheddar-ham croissants on a lined baking sheet.
Melt the two tablespoons of butter and brush it over each mini croissant. Sprinkle the poppy seeds lightly over the top.
Bake the cheddar-ham croissants for 16-18 minutes, until golden brown.
