A few simple tips for a midweek breakfast made easy, especially for the busy working mom!
Confession time: I am absolutely thrilled to be a 3rd grade teacher this year after so many years of working from home, but I seriously underestimated the time commitment. Now, obviously I knew I’d have to stay late some days and take work home on other days, but I’ve found myself spending about as much time planning and preparing for the week as I do actually teaching. I stay up late, wake up early, and I still feel like there just aren’t enough hours in the day to get things done. That’s why I have decided to find some shortcuts to make things go a little smoothly around my home to prepare for a good day at work.
This post is filled with confessions – so here’s another: On most days, Richard prepares the kids a beautiful breakfast. He makes cheesy scrambled eggs with toast and bacon, sometimes pancakes, or even sausage biscuits while I get myself dressed and ready for the day. He really is an awesome dad, but it kinda makes me feel like I’m not doing enough to get my own children ready for school. Once I feel more accustomed to the daily planning that comes with being a teacher, I’d like to step up my mom game. Midweek breakfast preparations will definitely be on my agenda, and that means taking a few shortcuts, like heating up some Jimmy Dean® Biscuit Roll-Ups with Sausage, Egg & Cheese and serving them with a side of fresh fruit for myself and the kids.

These Jimmy Dean Biscuit Roll-ups are super easy to prepare. The suggested serving size is two, so I placed them in the microwave for 1 – 2 minutes, allowed them to cool for a minute, and served. Seriously no time at all, and when served with my favorite fruits like grapes and raspberries, it makes a balanced breakfast. Bonus points for a quick cup of iced coffee before leaving for work {pre-packaged cold brew hits the spot}.
In addition to being tasty and easy to prepare, these Jimmy Dean Biscuit Roll-ups contain 10 grams of protein and are free of high fructose corn syrup and artificial preservatives. All of this and they’re made with real eggs and real cheese? Sounds like a win to me!
I was talking to one of my student’s parents today, and she must have done a quick internet search and learned that I am a blogger. She asked me why, when I clearly have a successful blogging career, would I want to teach? And while I am incredibly grateful for all the opportunities I’ve received as an influencer over the last almost ten years, I’m happy to share my gift of teaching with my community at a school I love. Of course, I’m going to continue blogging part-time because it’s a really awesome career, too. A girl can have everything, right? Especially when she learns to take some quick shortcuts to make her life a little easier each day, too.
