The LGBTQ sandwich – lettuce, guacamole, bacon, tomato, queso – is the most delicious sandwich you will ever try!
Since this isn’t a sponsored post, I have the freedom to write whatever I want, so I think I’ll take full advantage of this opportunity. The end of Q1 usually marks my worst month of blogging financially, so rather than being down in the dumps about it, I figured I’d have some fun! Several months back, I saw a meme going around about a sandwich called the LGBT. It had lettuce, guacamole, bacon, and tomato. But I knew I could be even more inclusive because that’s what it’s all about, right? At a friend’s suggestion, I added queso (AKA pepper jack cheese) to make this LGBTQ sandwich recipe. This sandwich does not disappoint. It is the perfect balance of textures and flavors, like unicorns and rainbows on a plate. Also, how cool is it to say “I made the LGBTQ sandwich”? Whether you’re getting ready for Pride or serving up lunch for your kids, I highly recommend you try this delightful recipe.
LGBTQ Sandwich Ingredients:
- 2 slices of bread
- 3 large pieces of lettuce
- 1 avocado
- 3 slices of tomato
- 2 slices of pepperjack cheese
- salt + pepper
- 1 T butter

As with any recipe on my site, since we need a 300-word minimum for Google to even acknowledge its existence, I tell you about the ingredients I’ve selected. These are yummy ingredients. I recommend using butter or Bibb lettuce, and not just because it costs twice as much money, but because it’s actually the perfect size for sandwiches and has a great texture. I’ve heard way too many people tell me “I hate tomatoes” recently, so for those crazy people, omit the tomato, be less inclusive, and enjoy the sandwich less because the tomato really makes it. If you’re vegetarian/vegan, you can use fake-on, but that stuff is pretty gross, so I don’t know what else to tell you. My husband said that pepper jack cheese isn’t “queso”, but my cheese slices identify as queso, so don’t argue with them. Make sure your bread is seedy. Because, why not? Oh, and avocado is perfection. Get one that is soft enough to press into a little, but not where your whole finger goes through the skin.
If you made it past the “gather your ingredients” step, you should be ready to go now! Obviously I cooked my bacon in advance {because otherwise it would be raw meat on a cutting board with ready-to-go ingredients and that just looks gross and unsanitary}. I was super lazy with my guacamole, so I just mashed up the avocado and added salt and pepper. You can use real guacamole with cilantro, lime, red onion, etc. if you are more motivated. I spread a layer of butter on one side of each bread slice and placed that side down on a griddle over medium heat. I also cut each cheese slice into triangles {because if the photos don’t look nice, moms won’t Pin them, and that’s how I get a majority of my traffic to this site} and placed them on the side of the bread facing up. I kept them on the griddle for several minutes until the bread was toasty and the “queso” started to melt.
Assembly is simple! Just layer the guac, lettuce, bacon, and tomato between your two slices of deliciously-toasted cheesy, bread, and this sandwich is ready to go. I recommend hiding in the closet… er… some other room to eat it by yourself because otherwise you’ll be forced to share it.
Seriously, how delicious does this LGBTQ sandwich look? Amazing, right? Honestly, it was hard to wait the few minutes to style these photographs and actually take them to eat this sandwich. It was just that tasty.
