Chocolate-Covered Frozen Key Lime Pie on a Stick

This Chocolate-Covered Frozen Key Lime Pie on a Stick is a delicious treat that is so simple to prepare.



Graham Cracker Crust:

  • 2 cups graham cracker crumbs
  • 2 oz brown sugar
  • 6 T melted unsalted butter

For the Filling:

  • 14 oz can of sweetened condensed milk
  • 1 cup whipped cream
  • 1/2 cup Key Lime juice

For the chocolate:

  • 1/2 cup dark chocolate chips
  • 1 T coconut oil


  1. Begin by preparing the graham cracker crust. Preheat your oven to 375 degrees F. In a food processor, grind half a box of graham crackers into crumbs {or you can throw the graham crackers in a large zipper bag and pound away at it with your hands – good stress relief!} In a large bowl, combine the graham cracker crumbs, melted butter, and brown sugar. Press the mixture into a springform pan lined with either parchment paper or aluminum foil. You should get an even coating along the bottom and up the sides. Bake in the oven for 10-12 minutes until the edges just start to darken.
  2. Squeeze the juice of about a dozen Key limes to make a half cup of Key lime juice. If you can find Key limes near you, I highly suggest using them. If not, use regular lime juice and add a splash of orange juice for added flavor.
  3. Whisk one cup of whipping cream rapidly to create delicious whipped cream. You can do this with a stand mixer or by hand. In a separate bowl, combine the half cup of lime juice and can of sweetened condensed milk. Carefully fold in the whipped cream until just combined. Since this is a no-bake recipe filling, just pour into your chilled pie crust. Place the pie into the freezer a minimum of 4 hours. I placed mine in the freezer over night.
  4. Remove the pie from the freezer and cut into 8 equal slices. Insert a popsicle stick in each slice.
  5. In a small saucepan over low heat, combine 1/2 cup of dark chocolate chips and 1 tablespoon coconut oil and stir until melted. Using a small spoon, drizzle the chocolate over the frozen Key lime pie slices. For an added bonus, you can sprinkle with graham cracker crumbs, too!
  6. Place the beautifully-drizzled slices of Key lime pie back into the freezer so the chocolate hardens completely. Now, they are ready to enjoy. Just remember, the inside will melt kinda quickly, so they will have to stay in the freezer until they are ready to be devoured.
