The school year has started, and I am off to a tremendously busy beginning. Now that I am working as a full-time third grade teacher, squeezing in blogging is definitely a challenge. Squeezing in meal planning is even more of a challenge, so as much as I want to plan elaborate meals, bake bread from scratch, and whip up fabulously complex desserts, that’s just not happening right now. However, I have a trick to making a phenomenal and simple dessert that you can prepare in just minutes. Bonus: your family will love it! Grilled Nectarines with Frozen Yogurt and Pecans Ingredients:
- 2 ripe nectarines
- 1 pint vanilla frozen yogurt
- Diamond of California’s Nut Toppings {I used Maple Glazed Pecans}
- 2 T honey
- 1 T butter
Grilled Nectarines with Frozen Yogurt and Pecans Directions:
This is such a simple late-summer dessert that you can make at home. Nectarines are a delicious stone fruit, but you can also try fresh peaches or plums if you prefer. Gather your ingredients to get started! These Diamond of California’s Nut Toppings are available in a variety of flavors. I purchased original glazed walnuts and maple glazed pecans. I selected the maple glazed pecans because I love how that flavor complements the nectarines.
Begin by splitting your nectarines in half and removing the pit. I grilled mine on my gas stove indoors in a grill pan, but you can also use a gas grill or charcoal grill outdoors. Use the tablespoon of butter to create a non-stick surface, and add the nectarines cut-side down. Remove the nectarine halves from the grill when you have nice grill marks. This indicates the natural sugars have caramelized.
Here’s the fun part: you can build your dessert exactly how you want! I placed one nectarine half on a plate. I then added a scoop of vanilla frozen yogurt over the top. The warmth of the grilled nectarine begins to melt the frozen yogurt in the perfect way.
I love buying local honey at our farmer’s market, and it makes the perfect drizzle over the vanilla frozen yogurt. If you aren’t a fan of honey, try maple syrup over the top. Last, but certainly not least, add Diamond of California’s Nut Toppings over the top. I roughly chopped them to make bite-sized pieces.
This is the kind of dessert that must be served immediately because the warm nectarines quickly melt the frozen yogurt over the top. Combined with the honey, it makes a delicious syrup for the dish.
