Crab Cakes & Sweet Potato Hash make a perfect Sunday brunch recipe!
I may have mentioned this before, but brunch is my favorite meal of the week. Every Sunday, I prepare something extra special for my family, often after a trip to The Fresh Market on Saturday. It may be an egg dish, a toast dish, something delicious with smoked salmon. But today, I’m sharing a new recipe I created: Crab Cakes & Sweet Potato Hash. What I love about brunch is that I can create a sort of breakfast/lunch hybrid dish, with a dinner-sized portion since it’s generally taking the place of two meals. For this brunch dish, I headed to The Fresh Market to purchase my ingredients, like the prepared ultimate lump crab cakes in the seafood section and sweet potatoes in the produce section. Crab Cakes & Sweet Potato Hash Ingredients:
- 2-pack of Ultimate Lump Crab Cakes from The Fresh Market
- 2-3 sweet potatoes
- 1 small green pepper
- 1 small red onion
- 1 lemon
- 1/4 cup mayonnaise
- 1 T Dijon mustard
- 1 t fresh thyme
- olive oil
- salt + pepper to taste
Crab Cakes & Sweet Potato Hash Directions:
Begin by gathering your ingredients. I made this hash with sweet potatoes because I thought it provided a delicious balance with the savory flavor of these lump crab cakes available at The Fresh Market. The green peppers and onions complement the sweet potato and the thyme adds that pop of seasonal freshness. The lemon is used to make a creamy dressing that you can drizzle over the top of the dish.
Prepare the ingredients for the hash. Cut your sweet potatoes into consistent cubes about 3/4″ each. You should have about 2 cups of diced sweet potato. Add to a pot of boiling water and cook 5-10 minutes, until the sweet potato can be easily pierced with a knife, but is still firm. Drain immediately. Cut the green pepper and onion to similar-sized bites. Add 1/4 cup of olive oil to a large pan {I prefer a cast-iron skillet}, and add your peppers and onions. Sauté about 5 minutes until they begin to turn translucent, then add the cooked sweet potatoes. Be sure you have your stovetop turned to a medium-high heat so you can get a bit of a char on the ingredients – that makes for a great hash! Add 1 teaspoon of fresh thyme leaves, and season with salt and pepper. The sweet potatoes may begin to break down as you cook them with the other ingredients, and that is perfectly okay. It makes for a delicious hash!
Turn your broiler on to pre-heat. While the hash is cooking, you will also prepare your crab cakes. Because these crab cakes are round, I found that the best way to prepare them was to sauté them in a drizzle of olive oil over a medium heat. When the bottom begins to brown after about 5 minutes, place the entire pan in the oven with the broiler on until the tops of the crab cakes are golden, about another 5 minutes. The last step before plating is to prepare the lemon-Dijon dressing. Combine the mayonnaise, Dijon mustard, and juice of half a lemon. I actually added all three ingredients to a squirt bottle to get that restaurant-style drizzle over the top. Why not make an elegant plate of food, even when you’re dining-in, right?
To plate this Crab Cakes + Sweet Potato Hash dish, add the sweet potato hash to the bottom of your plate. Add one lump crab cake over the sweet potato hash. Finally, drizzle the lemon-Dijon dressing, and your delicious brunch is ready to serve to yourself and a guest. It’s a great meal to enjoy al fresco {that’s when you dine outdoors}, especially during the fall months as the weather begins to cool.
