Summer is well underway, and we are enjoying every moment we can as a family in our new home in Gainesville! We moved about 3 weeks ago, so we are just starting to feel settled within this community. Since Richard is a teacher, he is home with us, so our days are spent unpacking, organizing, swimming in the community pool, discovering new hangouts, making friends, and enjoying the outdoors. We are going to be doing some serious renovations to our home shortly, so this is basically the calm before the storm. One of our favorite things to do together is visit our community’s farmer’s market every Saturday morning. It’s a mile walk from our home, and vendors sell a wide range of products, like fresh produce and herbs, local cheeses and honey, and pasture-raised beef. Inspired by my love of semi-homemade recipes, I decided to create a tasty snack for the kids combining fresh strawberries and ricotta cheese with new Eggo® Choco-Toast™ Chocolatey Chip & Eggo® Cinna-Toast™ Cinnamon Roll: Chocolate-Strawberry Cannoli Toasts. These take just a few minutes to prepare and are a fun summer snack on-the-go.
This recipe makes 16 mini toast sandwiches.
Ingredients:
- 8 pieces of Eggo Choco-Toast and/or Cinna-Toast (32 mini toasts)
- 1 cup whole milk ricotta cheese
- 1 pint strawberries
- 1/3 cup powdered sugar
- 1/4 t cinnamon
- 1/2 cup mini semi-sweet chocolate chips
Directions:
Begin by toasting up the Eggo Choco-Toast and/or Cinna-Toast – Each one gives a different flavor to these Cannoli Toasts, so choose your family’s favorite flavor combination. These can be individually toasted in the oven or laid on a sheet pan in a 375 degree F oven for just a few minutes to toast all at once. Now with no artificial flavors and colors from natural sources, Eggo Choco-Toast and Cinna-Toast are a fun option for breakfast or snacking.
While they are toasting, in a small mixing bowl, combine the whole milk ricotta cheese, sifted powdered sugar {to avoid any lumps}, and cinnamon. This is traditional cannoli cream is a favorite in our family! Just make sure you don’t eat the whole bowl of it before preparing your toasts!
Next, slice the strawberries. Each strawberry should make about If you prefer, you can use raspberries {my personal favorite} or even banana slices. That’s the great thing about a simple recipe like this – it is so easy to customize.
This is the fun part: assembly. Lydia enjoyed helping me make these mini sandwiches. When the toasts have cooled, cut them into quarters so they look like individual mini pieces of toast. Spread or pipe a layer of cannoli cream, add a sliced strawberry, a little more cannoli cream, and top with another piece of the toast.
Dip one end of the sandwich {or, you know, all four sides} into mini chocolate chips, and your Chocolate-Strawberry Cannoli Toasts are ready for your children to enjoy. This is a quick treat your kids will certainly love! Lydia had one yesterday afternoon — and asked to have more for breakfast this morning.
