With the kids starting at a new school and Richard starting a new job, life is about to get a little hectic! Last year, Lydia’s school started at 8:45 and Bryce’s started at 9, but now, both kids have to be at school around 7:40. This is a definite adjustment for us, in addition to all the other changes we have made since our big move back in June, but thankfully Walmart is there to help. With everything that is going on, I need to find a few shortcuts to help with meal planning. A great way to do this is by combining fresh produce with a few pantry items to make a delicious midweek meal, like this Easy 20-Minute Chicken Tortilla Soup.

Recipe makes 4 bowls of soup.
Ingredients:
- 10.75-ounce can of Campbell’s® Condensed Tomato Soup
- 12.5-ounce can of Swanson® Premium Chicken
- 1 cup Pace® Picante Sauce
- 15-ounce can of black beans
- 1 quart chicken stock
- 4 corn tortillas
- 1 cup diced bell pepper
- 1 cup diced red onion
- 1 Tablespoon chili powder
- Vegetable oil
- Salt & pepper to taste
- Toppings: shredded cheese, scallions, cilantro, jalapenos, sour cream, lime
Directions:
Begin by gathering your ingredients. There’s a lot of flexibility with ingredients in this recipe. I chose sweet bell pepper and red onion as my two main vegetables, but you may want to add carrots or celery as well…or you can include all four! Select the vegetables that are your family’s favorites.
Roughly chop whatever vegetables you have selected for this recipe. The vegetables will be pureed, so you don’t have to worry too much about consistent knife cuts. Add two teaspoons of oil to the bottom of your large soup pot, and saute your vegetables for about 5 minutes.
Next, add a can of Campbell’s® Condensed Tomato Soup, one cup of Pace® Picante Sauce, a quart of chicken stock, two corn tortillas torn into pieces, and a tablespoon of chili powder to the pot with the sauteed vegetables. I chose a mild Pace® Picante Sauce so this soup is not spicy for the kids {then I add extra heat for myself after ladling the bowl of soup since I love spicy foods}. The corn tortillas in the soup are what provide the body to the soup and give it a great corn flavor. Bring the soup to a boil for about five minutes, then transfer it to a high-speed blender to puree. Return that mixture to the pot after.
Now it’s time to add in one can of Swanson® Premium Chicken and a can of black beans {be sure to drain both cans}. If you don’t like black beans, dry kidney beans or pinto beans work also. I bet lentils would be delicious in this recipe, too. You can also add frozen or fresh corn, peas, or even cooked rice. That’s part of the flexibility that I love about this tasty recipe! This is also a good time to flavor with salt and pepper.
Simmer the soup over a medium heat about 5 more minutes until it heats through. While that’s cooking away, heat up about an inch of oil in a saute pan. Thinly slice two corn tortillas to create strips. When the oil is hot, add the strips, cook about 90 seconds, remove from the oil, and drain them on a paper towel. I like to sprinkle these crisp corn tortilla strips with a little salt and chili powder for added flavor.
Your soup is now ready to serve! Along with the soup and crisp tortilla strips, I prepare a variety of toppings. These can include: slices of lime, shredded pepper jack cheese, sliced jalapeno or serrano chili, sour cream, diced tomato, hot sauce, cilantro, or sliced scallions. Get creative, and make this Chicken Tortilla Soup as mild or spicy as you would like!
This is such an easy midweek dinner. From start-to-finish, it takes about 20 minutes. The recipe allows you to make four servings of a well-balanced meal your family will love because they can customize it exactly as they want. It’s like building your own tacos — in soup form! With just a few simple ingredients you can find at Walmart, dinner is ready in no time at all!
